THE PRESERVES: SICILY’S FLAVOURS.

Leonardo starts distracted from the computer on which he was now bent over, well he can’t even quantify how many hours.

Leonardo smiles, he thinks about how much work he still has to do, but he is more worried about what Sara would say when she returned home and found the kitchen in a mess: “You are always working, you could at least tidy up!”.  And then take the little one to clean. They enter the dining room and already glimpses the shattered jar and the jam scattered everywhere.  For a moment he snorts, but then he remembers distant memories, which seemed to have gone into oblivion, which he hadn’t thought of for a long time. At the sight of that image, twenty or thirty jars pass in front of him: one filled with aubergines in oil, one with mushrooms, one with apple jam, one with pears; and manages to identify its content, as well as the bright color of the interior, also thanks to the label affixed to the front. Handwritten by his grandmother Giovanna in each content. He remembers the vastness of products that were contained in a space that seemed so small, all next to each other. Once to get one with canned peach he also got a harsh reproach: he had climbed into a chair to get to the booty, and in the way he pulled it out of the cabinet he had dropped two jars of jam … grandmother Giovanna had taken it back in badly and had him clean everything from top to bottom. He remembers being mortified that time, but now he thinks about it and starts laughing.

Sara would certainly not have used a harder tone than Nonna Giovanna, so the worst had already passed.  Detaching, due to a small mess of his son, from the usual work routine, Leonardo realized that he had lost sight of the main objective: to create new memories, for him and for his child. He thought happily, that one day perhaps Paolo would, when he grew up, think back to that moment and laugh at his father’s complicity, just as he had laughed today at the pungent grandmother Giovanna. 

 

 

 

Grandmothers’ houses always had a recess in the wall covered by a curtain or two locked glass doors: the sideboard.

 

 

 

 

Jams, caponata, mushrooms in oil, pickled aubergines and all kinds of sweet or savory preparations that could be put in a vacuum-sealed glass jar were brought out from that dense recess of shelves. Each opening was a triumph of mouth-watering perfumes.

TED Francesco allows visitors to travel on a journey linked to the preparation of preserves, these jars containing local products imbued with magical taste, obviously based on the availability of seasonal fruits and / or vegetables.

For those with a sweet tooth, therefore, not only will there be the opportunity to access these delicacies, but to witness the procedures in person, so as to learn one of the ancient Sicilian traditions, and more precisely Madonite..
